Delicious Roast Beef
3 lbs Grass fed sirloin tip or rump roast
3 T Olive oil
1 t Celtic sea salt
1/4 t Fresh ground pepper
1/2 C Water
5 T Butter
1 or 2 Shallot (finely chopped)
3/4 lb Fresh sliced mushrooms
1 clove Garlic - minced
1/4 C Flour
1/2 C Madeira wine
Brown roast in oil, season with salt and pepper. Place in covered Dutch oven with water and cook at 275 degrees 2-3 hours or until tender. May use crock pot. Remove meat and keep warm while preparing sauce. Reserve meat juices.
Sauté mushrooms, shallots, garlic in 2 T butter and set aside. In large skillet melt 3 T butter, add flour and cook over medium heat approximately 1 minute. Add wine and 1 C reserved meat stock. Stir and heat to a boil. Add mushrooms, lower heat, and simmer 5 minutes.
Slice beef across the grain and place on platter, pour mushrooms and wine sauce over slices.

Re: Delicious Roast Beef
Hey, now Frank finally gets to eat something that's cooked!
--- To announce that there must be no criticism of the president, or that we are to stand by the president right or wrong, is not only unpatriotic and servile, but is morally treasonable to the American public." - Theodore Roosevelt
